Salmon and Asparagus Linguine

Was so in need of a simple meal this evening. And this was what I came up with. Bit of greeny goodness, bit of oily goodness, bit of satisfying carbs. And it was made from ingredients in my fridge and pantry (tick!), and it was ready in literally 10 minutes (tick again!). It was just for me and hubby as the kiddies were in bed, and there were no leftovers, as it was pretty damn good.


Ingredients

• 150g fresh linguine

• 2 tbsp EVOO

• 6 asparagus spears

• pack of smoked salmon (about 115g)

• 2 tbsp pine nuts

• handful of freshly grated parmesan

• 2 handfuls of baby spinach


Method

• boil a saucepan of water for your linguine, when boiling, place linguine in

• heat oil in a pan for the asparagus and pine nuts

• on high heat, fry the pine nuts and asparagus, moving frequently so they don't burn

• meanwhile grate a handful of parmesan and shred the smoked salmon

• remove the asparagus and pine nuts from the heat

• the linguine should be al dente, drain and return to the saucepan

• add the asparagus, pine nuts, salmon, parmesan, baby spinach to the pasta pan and toss through

• serve with a little extra EVOO drizzled on top
