Gobble it Up Turkey Bowl

This bowl is another of my easy mid week meals to help the afternoon craziness rather than add to it. I adapted it from my lovely neighbour down the road (thanks Elle). She normally uses pork, but I like to mix it up with Turkey to add a bit more flavour and nutrients to the bowl. Served with a grain it becomes a protein packed meal, with lots of iron and B vitamins to boot.

Ingrediens

• 500g turkey mince

• 1 tablespoon of coconut oil

• 1 eggplant chopped roughly

• 1 tablespoon soy sauce

• big thumb of grated ginger

• 2 chopped shallots

• sliced tomatoes for serving

• sliced cucumber for serving

• coriander for serving

• 4 leaves of iceberg lettuce chopped

• 1 cup of brown rice (turns into more when cooked)

• siracha to your taste for serving


Method

• make brown rice in rice cooker; 3 cups of water to 1 cup of rice (this can take sometimes 30 mins so make sure the rice is the first thing you do or you'll be waiting for it when your turkey is ready)

• heat oil in pan over high heat

• add turkey and combine for 2 minutes

• add chopped eggplant, stir for 1 minute and turn to med-high heat and cover

• stir every 3 minutes and then cover for about 20 minutes all up (the eggplant will disappear and make the mince creamier)

• add ginger and soy sauce and stir for another 2-3 minutes

• serve turkey in a bowl with heaped rice, chopped lettuce, sliced tomato, shallots and coriander. Add siracha if you wish.
